If you have lived in the United States for any period of time, this concept seems downright outrageous. It feels so totally un-American that the word foreign seems a very apt way to describe this particular French employment practice. Our bistro menu today features dishes à la bretonne, meaning that they will be prepared or garnished with white navy beans. One of Brittany's gourmet products is a small white bean, the Coco de Paimpol, which was recently recognized with the Appellation d'Origine Contrôlée guarantee of quality. In fact, the whole region is mobilized during the harvest because the beans must be gathered by hand. Enjoy
